When you leave your home to move to a new country, you leave many things behind but take your culture with you. Growing up in a western country, I learned to be ashamed of who I am. I felt ashamed when new friends would visit me at home, and we didn't have the regular snacks served (in Korea, you often have fruits instead of chips and chocolate when guests visit). I wanted to hide every time my parents ordered hot spicy sauce in an Italian restaurant to add to their pasta (they missed kimchi). As a little kid, I refused to eat kimchi with garlic and insisted on eating pasta with a fork at home.

I just wanted to fit in.

But life is a game, and you make your own rules. And this might be something I love about food so much. It's the physical form of versatileness. You can combine many things you love and mix them into something new - like yourself adapting to a new environment and becoming a better version of yourself.

Recipe (for 3–4 servings):

300g pasta
250g cherry tomatoes
280g chopped sour kimchi
12 garlic cloves
225g shrimps
1/2 red chili pepper (optional, it can get really spicy)
parsley
parmesan cheese

1) Start by cutting kimchi with scissors in a bowl. It helps to avoid kimchi juice spills everywhere. Slice garlic, chili pepper, and cherry tomatoes.

2) Cook your favorite pasta and set it aside. Add 1 tbsp olive oil and shake well so the noodles won't stick together. (I used bucatini - thick pasta noodles - and they fit well with the sauce)

3) Heat a frying pan over medium heat, and add olive oil. Start stir-frying garlic first, then add the frozen shrimps and sliced chili pepper. Cook until shrimps are done.

4) Toss in the chopped kimchi and stir-fry for 4–5 minutes. Add the tomatoes and stir-fry again for 4–5 minutes.

5) Add the noodles and mix well.

6) Add parmesan cheese and chopped parsley. Add salt and pepper to your liking.

7) Serve and top off with parsley. Add a dash of lime or lemon juice. I also put a little bit of truffle olive oil - it was delicious!!
