Kimchi pancakes

Ingredients:
- 250g kimchi, cut into small pieces
- 2 spring onions, finely cut
- Approximately 100ml kimchi juice
- 120g plain flour
- 1 tsp salt
- 1 tsp sugar
- 200ml water
- 2 tbsp greased oil for cooking

Method:
1. To make the batter, simply mix all the ingredients together in a bowl until no lumps are visible
2. In a nonstick pan over a medium heat, add the oil and bring to temp. You want some heat in the oil but not super hot
3. Pour the batter in the pan and let it cook for 3-4 minutes before flipping and continue cooking on the other side until it's cooked through and crispy
4. Remove and serve while it’s still hot
5. Enjoy!
