Stuffed baby peppers

Ingredients:
400g baby peppers
1 onion (finely chopped)
1/2 bunch of coriander (chopped)
300g mincemeat (raw)
50g rice (rinsed until water runs clear)
1/2tsp Mediterranean spice mix
1/2tsp dried basil
1/3tsp nutmeg
1tbsp olive oil
Salt to taste
Pepper to taste
Chilli flakes to taste
450g tomato sauce
125g mozzarella cheese (shredded)

Method:
Preheat oven to 200C (fan)
Prepare baby peppers, wash, trim off the tops with the stems and remove the seeds.
In a large bowl combine mincemeat, onion, coriander (reserve some for garnish), rice, salt, pepper, chilli flakes, Mediterranean mix, dried basil, nutmeg, and olive oil. Mix well.
Stuff the baby peppers with mincemeat mixture. If you got leftover stuffing, make small meatballs, so we can add them in between peppers.
Cover the bottom of an ovenproof baking dish with tomato sauce. Arrange peppers and meatballs onto the baking dish. Pour the remaining tomato sauce evenly over the peppers.
Cover with lid or aluminium foil and bake at 200C (fan) for 50 minutes - 1 hour.
Remove the lid, add shredded mozzarella on top and bake for another 10 minutes.
Garnish with coriander and enjoy!
